Ingredients:
- 200g sweet potato noodles (dangmyeon)
- 1 medium carrot, julienned
- 1 bell pepper, thinly sliced
- 1 medium onion, thinly sliced
- 2 cups spinach, blanched and squeezed dry
- 200g beef (optional), thinly sliced
- 2 tablespoons soy sauce (for beef)
- 1 tablespoon sesame oil (for beef)
- 4 tablespoons soy sauce (for noodles)
- 2 tablespoons sugar
- 2 tablespoons sesame oil (for noodles)
- 1 tablespoon minced garlic
- Salt and pepper to taste
- Sesame seeds for garnish
- 1 green onion, chopped (for garnish)
Method:
- Prepare Noodles and Vegetables:
- Cook sweet potato noodles in boiling water according to package instructions, usually about 5-7 minutes. Rinse under cold water, drain, and cut into manageable lengths.
- Stir-fry each vegetable separately in a pan with a little oil and salt, setting them aside when done.
- Beef Preparation (Optional):
- If using beef, marinate it for at least 10 minutes in 1 tablespoon of sesame oil and 2 tablespoons of soy sauce. Stir-fry in a hot pan until fully cooked. Set aside.
- Mix Everything:
- In a large bowl, mix the noodles with soy sauce, sugar, and sesame oil. Then add the cooked vegetables, beef (if used), and minced garlic. Toss everything together until well combined. Adjust seasoning with salt and pepper.
- Serve:
- Garnish with sesame seeds and chopped green onions before serving. Can be enjoyed either warm or at room temperature.
Notes:
- Japchae can be customized according to preference; mushrooms, spinach, and different types of meat or tofu can be added.
- It's important to stir-fry the vegetables separately to maintain their individual flavors and textures.
