Caldo Verde, meaning "green broth," is a comforting, traditional Portuguese soup known for its simplicity and soul-warming flavors. Originating from the Minho Province in northern Portugal, this dish is a beloved staple across the country, often served during celebrations and family gatherings. Made with potatoes, collard greens, and chorizo, Caldo Verde is a testament to the rustic and hearty cuisine of Portugal.

Ingredients:

- 1 lb (about 500g) potatoes, peeled and chopped


- 2 tablespoons olive oil


- 1 onion, finely chopped


- 2 cloves garlic, minced


- 6 cups (1.5 liters) chicken or vegetable broth


- 1/2 lb (about 250g) chorizo sausage, thinly sliced


- 1 lb (about 500g) collard greens or kale, thinly sliced


- Salt and black pepper to taste

Method:

- Prepare the Base:

- In a large pot, heat olive oil over medium heat. Add the onions and garlic, sautéing until soft and translucent.


- Add the potatoes and cook for a few minutes, stirring occasionally.

- Cook the Soup:

- Pour in the broth and bring the mixture to a boil. Reduce heat and simmer until the potatoes are tender, about 20 minutes.


- Use an immersion blender (or transfer to a blender) to puree the soup until smooth.

- Add Greens and Chorizo:

- Return the pot to the heat. Add the sliced chorizo and cook for 5 minutes.


- Add the collard greens or kale, cooking just until the greens are wilted but still bright green, about 3-5 minutes. Season with salt and pepper to taste.

- Serve:

- Let the soup rest for 5 minutes to allow flavors to meld. Serve warm, drizzling a bit more olive oil on top if desired.

Notes:

- For a vegetarian version, omit the chorizo and add smoked paprika for a similar depth of flavor.


- Caldo Verde is traditionally served with a slice of Portuguese cornbread (broa).
