Cornish Pasty
Dive into the heart of Cornwall with this authentic Cornish Pasty recipe. A symbol of Cornish identity and heritage, the pasty is a hand-crafted pastry filled with beef, potatoes, swedes, and onions, seasoned to perfection. Traditionally, it was the staple lunch of Cornish miners, now it's a beloved meal enjoyed by all.

Serving: 4 pasties

Ingredients:

- For the Pastry:

- 3 cups all-purpose flour


- 1 cup unsalted butter, cold and diced


- 6-8 tablespoons cold water


- 1 teaspoon salt

- For the Filling:

- 1 lb beef skirt, cut into small cubes


- 2 medium potatoes, peeled and diced


- 1 small swede (rutabaga), peeled and diced


- 1 medium onion, finely chopped


- Salt and pepper to taste

- 1 egg, beaten (for glazing)

Method:

- Prepare the Pastry:

- In a large bowl, mix flour and salt. Rub in the butter until the mixture resembles breadcrumbs. Gradually add cold water until a dough forms. Wrap in cling film and chill for 30 minutes.

- Assemble the Pasties:

- Preheat the oven to 375°F (190°C). Divide the dough into 4 equal pieces and roll each into a round about 8 inches in diameter.


- On one half of each round, layer the beef, potatoes, swede, and onions. Season with salt and pepper. Leave a margin around the edge.


- Brush the edges with beaten egg, fold the pastry over the filling to form a D shape, and crimp the edges to seal.

- Bake:

- Place the pasties on a baking sheet, brush with the remaining beaten egg, and make a small slit in the top of each to allow steam to escape.


- Bake for 45-50 minutes or until golden brown. Allow to cool for 10 minutes before serving.

Notes:

- The key to a perfect Cornish Pasty is in the crimping; a traditional pasty should have 20 crimps.


- For a vegetarian version, substitute the beef with additional vegetables or legumes.


- Serve warm for the best flavor, though they're also delicious cold.
