Ingredients:

- 1 cup of mixed vegetables (such as carrots, beans, and peas), chopped


- 2 medium-sized potatoes, diced


- 1 tomato, chopped


- 1 onion, sliced


- 2-3 cloves of garlic, crushed


- 1-inch piece of ginger, finely chopped


- 200g smoked or dried fish (optional)


- 5-6 cups water


- Salt to taste


- A handful of fresh coriander leaves for garnishing


- 2 green chilies, slit (adjust to taste)

Method:

- Prepare the Ingredients:

- Rinse the vegetables thoroughly. If using smoked or dried fish, soak it in water for a few minutes, then clean and set aside.

- Cook the Stew:

- In a large pot, combine the chopped vegetables, potatoes, tomato, onion, garlic, ginger, and green chilies. Add water and bring to a boil.


- Reduce the heat to a simmer, add the fish (if using), and season with salt. Cover and cook for about 20-25 minutes, or until the vegetables are tender.

- Garnish and Serve:

- Once the vegetables are cooked, check the seasoning and adjust if necessary. Turn off the heat and add chopped coriander leaves for garnish.


- Serve hot as a soup or with steamed rice for a complete meal.

Notes:

- Kangshoi can be customized based on available seasonal vegetables.


- For a vegetarian version, omit the fish or replace it with tofu.


- The dish is traditionally cooked with minimal spices to highlight the flavors of the vegetables and smoked fish.
