Ingredients:

- 1 cup butter, softened


- 1 cup brown sugar


- 1 cup white sugar


- 3 eggs, beaten


- 1 teaspoon vanilla extract


- 1 cup raisins


- 2 ½ cups all-purpose flour


- 1 teaspoon salt


- 1 teaspoon ground cinnamon


- 2 teaspoons baking soda


- 2 cups rolled oats


- ¾ cup chopped pecans

Method:

- Combine eggs, raisins, and vanilla in a small bowl. Cover and chill for 1 hour.


- Preheat the oven to 350 degrees F (175 degrees C).


- In a medium bowl, cream together the butter, brown sugar, and white sugar. In another bowl, combine the flour, salt, cinnamon, and baking soda.


- Add the dry ingredients to the creamed mixture and stir until well mixed. Then, mix in the egg and raisin mixture, followed by the rolled oats and pecans. The dough will be stiff.


- Drop teaspoonfuls of dough onto an ungreased cookie sheet.


- Bake for 10 to 12 minutes, or until the edges are golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes:

For softer and chewier oatmeal raisin cookies, you can soak the raisins in hot water for about 10 minutes before adding them to the cookie dough. This will plump them up and add moisture to the cookies. Drain the raisins well before adding them to the dough.
