Sütlaç, known as Turkish-style rice pudding, is a delightful dessert featuring rice grains simmered in sweetened milk. Traditionally served chilled in individual clay pots, it offers a versatile treat where sweetness levels and texture—ranging from firm to runny—can vary greatly based on personal taste preferences.

Ingredients:

- 100 grams of sugar


- 200 milliliters of water


- 45 grams of cornstarch


- 80 grams of rice (short or medium grain), such as baldo or arborio


- 1 liter of whole milk


- 2 teaspoons of rose water

Method:

- In a thick-bottomed pot, combine the rice and water. Bring to a boil, then let it simmer, stirring occasionally, until most of the water has evaporated, approximately 10-15 minutes.


- Pour in all but a few tablespoons of the milk. Carefully bring it to a boil, then simmer over low heat until the rice is completely softened, about 20 minutes or longer, depending on the rice type. Initially, it may seem like there's too little rice in the pudding.


- Add the sugar and stir thoroughly.


- Combine the cornstarch with the remaining milk. Gradually add this mixture to the pot, stirring vigorously and continuously until well incorporated. Maintain a simmer while stirring constantly for 5 minutes. This ensures proper thickening of the pudding and eliminates any residual cornstarch flavor.


- Remove from heat and stir in the rose water. Mix well, then transfer the pudding into 4-6 serving dishes.


- Preheat the broiler of your oven. Position the individual serving dishes high in the oven, just below the heat source, and broil until the top caramelizes. Keep a close eye on it to prevent burning; you want the surface to bubble up and caramelize.


- Allow the pudding to cool, then cover and refrigerate for at least 4 hours. Serve chilled.

Notes:


To prevent the rice from sticking to the bottom of the pot while simmering, ensure you use a thick-bottomed pot and stir occasionally. Additionally, when broiling the pudding to caramelize the top, keep a close eye on it as it can quickly go from caramelized to burnt. Enjoy the rich flavors of the pudding by letting it chill in the fridge for at least 4 hours before serving.
