Ingredients:

- 500g beef stew meat, cubed


- 500g okra, washed and trimmed


- 1 large onion, chopped


- 3 cloves garlic, minced


- 2 tomatoes, diced


- 2 tablespoons tomato paste


- 1 teaspoon ground coriander


- 1 teaspoon ground cumin


- 1 teaspoon paprika


- 1/2 teaspoon cinnamon


- Salt and pepper, to taste


- 2 tablespoons olive oil


- 2 cups water


- Fresh cilantro, for garnish

Method:

- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.


- Add the beef cubes to the pot and brown on all sides.


- Stir in the diced tomatoes, tomato paste, ground coriander, cumin, paprika, cinnamon, salt, and pepper.


- Add the water to the pot and bring to a boil. Reduce the heat to low, cover, and simmer for 1 hour, or until the beef is tender.


- Add the okra to the pot and simmer for an additional 30 minutes, or until the okra is cooked through.


- Adjust the seasoning if necessary, and serve hot, garnished with fresh cilantro.

Notes:


To reduce the sliminess of okra, you can soak it in vinegar or lemon juice for about 30 minutes before cooking.
