Strawberry Pie Recipe

Ingredients:
- 1 egg
- 1 lemon zest and/or orange zest
- 1 egg yolk
- 1 teaspoon baking powder
- ⅓ teaspoon salt
- 1 teaspoon vanilla extract
- 9 ounces fresh strawberries
- Homemade strawberry jam, enough to cover the tart
- 3 cups all-purpose flour
- ½ cup + 1 tablespoon white sugar
- ⅔ cup + 3 tablespoons cold unsalted butter
- Egg wash, demerara sugar, and cinnamon
Method:
- Preheat the oven to 180°C (350°F). In a bowl, combine the dry ingredients (flour, sugar, salt, baking powder, vanilla powder, lemon and orange zest).
- Add the cold butter, egg, and egg yolk. Quickly mix by hand or use a food processor until a smooth ball of dough forms.
- Work the dough as little as possible to prevent the butter from melting and the crust from coming apart.
- Divide the pastry into two pieces. Optionally, chill it. Transfer one piece of pastry to a 24/26 cm tart pan and evenly spread it over the bottom with your hands. Reserve the remaining pastry for decoration.
- Spread enough homemade strawberry jam (approximately 250 g) over the pastry.
- Wash 250 g of fresh strawberries, cut them in half, and arrange them on top of the jam in the pie crust. Get creative with the decoration, such as making a lattice.
- Brush the pastry with egg wash and sprinkle cinnamon sugar on top.
- Bake for 20 minutes in a fan-assisted oven or about 35 minutes in a conventional oven. Be careful not to burn it.
Notes:
For a glossy finish on your pie crust, brush it with a beaten egg mixed with a little water before baking. This will give your pie a beautiful golden color and a professional-looking shine.
