Ingredients:

- 3 tablespoons extra virgin olive oil


- 10g flat-leaf parsley leaves, finely chopped


- 250 g (about 2 medium) sun-ripened tomatoes, roughly chopped


- 5g mint leaves, finely chopped


- 3 spring onions, thinly sliced


- 50g radishes or Turkish green peppers, roughly chopped


- 2 tablespoons lemon juice


- Salt and pepper to taste


- 200g (about 3 medium) Middle Eastern cucumbers, partly peeled and roughly chopped

Method:

- Prepare your ingredients by chopping them, then lightly sprinkle some salt over the tomatoes and cucumbers.


- Transfer everything to a bowl. Season with additional salt and pepper according to your taste, and drizzle with lemon juice and olive oil.


- Give it a good mix and serve promptly.
