Ingredients:

- 1.5 pounds pork shoulder, cut into cubes


- 3 tablespoons white vinegar


- 6 cloves garlic, minced


- 1 inch ginger, minced


- 2 tablespoons vegetable oil


- 2 large onions, finely chopped


- 2 tomatoes, pureed


- 1 tablespoon chili powder


- 1 teaspoon turmeric powder


- 1 teaspoon cumin seeds


- 1 teaspoon mustard seeds


- Salt to taste

Method:

- Marinate the Pork:

- Combine vinegar, half of the minced garlic, half of the ginger, chili powder, turmeric, and salt in a bowl. Add the pork pieces and toss to coat. Cover and refrigerate overnight to marinate.

- Prepare the Spice Base:

- Heat oil in a large pot over medium heat. Add cumin seeds and mustard seeds. Once they start to pop, add the remaining garlic and ginger, and sauté until aromatic.

- Cook the Pork:

- Add onions to the pot and cook until golden. Stir in the marinated pork along with any remaining marinade and cook for about 10 minutes.


- Add the pureed tomatoes and enough water to cover the meat. Bring to a boil, then reduce the heat to low and simmer covered for about 45 minutes, or until the pork is tender.

Notes:

- Adjust the level of spiciness by increasing or decreasing the amount of chili powder.


- Serve with rice or naan to balance the intense flavors of the Vindaloo.
