Serving: 24 cookies
Ingredients:
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar, plus extra for coating
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 3/4 cup finely chopped walnuts or pecans
Method:
- Preheat Oven and Prepare Dough:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and 1/2 cup powdered sugar until light and fluffy. Stir in vanilla.
- Mix Dry Ingredients:
- Whisk together flour and salt in a separate bowl. Gradually add the flour mixture to the creamed butter, mixing until just combined. Fold in chopped nuts.
- Shape and Bake:
- Roll the dough into 1-inch balls and place them on the prepared baking sheet about 1 inch apart. Bake for 10 to 12 minutes, or until the bottoms are lightly golden.
- Finish with Powdered Sugar:
- Remove from oven and let cool on the pan for about 2 minutes. While still warm, roll the cookies in additional powdered sugar. Let them cool completely on a wire rack and then roll again in powdered sugar to coat thoroughly.

- The cookies can be stored in an airtight container for up to a week, making them perfect for advance preparation.
