Ingredients:

- 1 pound ground beef


- 1/2 cup breadcrumbs


- 1/4 cup finely chopped onion


- 1 egg, lightly beaten


- 1 teaspoon garlic powder


- Salt and pepper to taste


- 1 tablespoon olive oil


- 1 cup pineapple chunks, drained


- 1 green bell pepper, diced


- 1 cup sweet and sour sauce


- 2 tablespoons soy sauce


- 2 tablespoons brown sugar


- 1 tablespoon cornstarch


- 2 tablespoons water


- Cooked rice, for serving


- Chopped green onions for garnish (optional)

Method:

- In a large bowl, combine the ground beef, breadcrumbs, onion, egg, garlic powder, salt, and pepper. Mix until well combined, then shape the mixture into meatballs, about 1 inch in diameter.


- Heat the olive oil in a skillet over medium heat. Add the meatballs and cook until browned on all sides and cooked through, about 8-10 minutes. Remove the meatballs from the skillet and set aside.


- In the same skillet, add the pineapple chunks and diced bell pepper. Cook for 2-3 minutes, until the bell pepper is slightly softened.


- In a small bowl, whisk together the sweet and sour sauce, soy sauce, and brown sugar. Pour the sauce mixture into the skillet with the pineapple and bell pepper. Bring to a simmer.


- In another small bowl, mix the cornstarch and water until smooth. Stir the cornstarch mixture into the skillet with the sauce. Cook for 1-2 minutes, until the sauce has thickened.


- Return the meatballs to the skillet, stirring gently to coat them in the sauce. Cook for an additional 2-3 minutes, until the meatballs are heated through.


- Serve the sweet and sour meatballs over cooked rice, garnished with sesame seeds and chopped green onions if desired.

Notes:


For a twist, try using ground turkey or chicken instead of beef for lighter meatballs without sacrificing flavor.
