Manti, a cherished Turkish recipe, showcases tiny dumplings filled with seasoned meat, served with a garlicky yogurt sauce and melted butter spiced with Aleppo pepper. This culinary delight combines a satisfying texture with a burst of flavors, reflecting the rich culinary heritage of Turkey.

Ingredients:

- For the Dough:

- 2 cups all-purpose flour


- 1/2 teaspoon salt


- 2/3 cup water


- 1 egg

- For the Filling:

- 1/2 pound ground beef or lamb


- 1 onion, finely grated


- 1/2 teaspoon salt


- 1/4 teaspoon black pepper


- 1/4 teaspoon paprika

- For the Sauce:

- 1 cup plain yogurt


- 2 cloves garlic, minced


- Salt to taste

- For the Topping:

- 4 tablespoons butter


- 1 teaspoon Aleppo pepper or paprika

- Fresh mint leaves for garnish

Method:

- Prepare the Dough:

- Mix flour and salt in a large bowl. Make a well in the center, add the egg and water, and mix to form a dough. Knead until smooth. Cover with a damp cloth and let it rest for 15 minutes.

- Make the Filling:

- Combine ground meat, grated onion, salt, pepper, and paprika in a bowl. Mix well.

- Form the Manti:

- Roll out the dough on a floured surface until very thin. Cut into 1-inch squares. Place a small amount of filling in the center of each square. Fold the dough over the filling to form a triangle or bring the corners together to form a little bundle. Press edges to seal.

- Cook the Manti:

- Bring a large pot of salted water to a boil. Add manti and cook for 10-15 minutes until they rise to the surface and are cooked through.

- Prepare the Sauce:

- Mix yogurt with minced garlic and a pinch of salt.

- Prepare the Topping:

- Melt butter in a small pan, add Aleppo pepper, and cook for a few seconds until fragrant.

- Serve:

- Drain manti and place in a serving dish. Cover with garlic yogurt sauce, drizzle with spiced butter, and garnish with fresh mint leaves.

Notes:

- Manti can be time-consuming to prepare but are well worth the effort for a special occasion.


- These dumplings can also be frozen before boiling for a quick future meal.


- Adjust the amount of garlic and Aleppo pepper to suit your taste.
