Banana Muffins
These banana muffins are not only moist and delicious but also easy for kids to help make. They're perfect for using up ripe bananas and can be enjoyed as-is or with added walnuts or chocolate chips for extra flavor.

Ingredients:
- 1 large egg
- 1 teaspoon baking powder
- 1 large ripe banana, mashed
- ½ teaspoon salt
- ⅓ cup white sugar
- 1 teaspoon baking soda
- 3 large ripe bananas, mashed
- 1 ½ cups all-purpose flour
- ⅓ cup melted butter
Method:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin or line cups with paper liners. In a bowl, sift together flour, baking powder, baking soda, and salt; set aside.
- In a separate large bowl, mix bananas, sugar, egg, and melted butter until well combined. Fold in the flour mixture until smooth. Spoon the batter into the prepared muffin cups, filling each 2/3 full.
- Bake in the preheated oven until the tops spring back when lightly pressed, about 25 to 30 minutes. Cool briefly in the tin, then transfer to a wire rack to cool completely.
Notes:
For extra flavor and texture, consider adding chopped walnuts or chocolate chips to the batter before baking the muffins. Enjoy!
