Broccoli Cheese Soup

Prepare a rich and creamy soup by simmering broccoli and onions in vegetable stock. The result of this soup is very velvety and perfect for winter treats.

Ingredients:
- 4 cups chopped broccoli
- 1 ½ cups vegetable stock
- 3 cups shredded cheddar cheese
- Salt and pepper to taste
- ¾ cup heavy cream
- 1 small onion, diced
- 1 teaspoon minced garlic
Method:
- In a saucepan over medium heat, mix vegetable stock, broccoli, onions, and garlic. Stir for almost 5 minutes until it reaches a boil.
- Cover and let simmer for almost 10 minutes.
- Mix in cream and continue to cook for 3 to 5 minutes.
- Season it with salt and pepper to taste and enjoy!
Notes:For a creamier soup, add the cheese gradually, mixing frequently over low heat to achieve a smooth taste.
