Ingredients:

- 2 lbs ground beef


- 1 large onion, diced


- 3 cloves of garlic, minced


- 2 (15 oz) cans of kidney beans, drained and rinsed


- 2 (14.5 oz) cans of diced tomatoes


- 3 tablespoons tomato paste


- 2 tablespoons chili powder


- 1 tablespoon ground cumin


- 1 teaspoon smoked paprika


- 1/2 teaspoon cayenne pepper (adjust to taste)


- 2 cups beef broth


- Salt and black pepper to taste


- Optional garnishes: shredded cheddar cheese, sour cream, chopped green onions

Method:

- Brown the Meat:

- In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned. Drain excess fat.

- Sauté Vegetables:

- Reduce heat to medium. Add the diced onion and minced garlic to the pot with the beef. Sauté until the onions are translucent.

- Combine and Simmer:

- Stir in the beans, diced tomatoes, tomato paste, chili powder, cumin, smoked paprika, cayenne pepper, and beef broth. Season with salt and black pepper.


- Bring to a boil, then reduce heat to low and simmer, uncovered, for about 1 hour 30 minutes, stirring occasionally.

- Serve:

- Let the chili rest for 10 minutes after cooking. Serve hot with optional garnishes like shredded cheese, sour cream, and green onions.

Notes:

- For a deeper flavor, consider adding a piece of dark chocolate or a splash of coffee towards the end of cooking.
