- Vegetable oil for frying

Method:

- Preheat your deep fryer or a large, deep pan of oil to 350°F (175°C).


- For the batter: Mix 1 cup of flour with baking powder and a pinch of salt. Gradually whisk in the cold beer or sparkling water until smooth.


- Dust the fish fillets lightly with flour, then dip into the batter, letting any excess drip off.


- Carefully lower the battered fish into the hot oil. Fry for about 6-8 minutes until golden and crispy. Remove and drain on paper towels.


- For the chips: Fry the cut potatoes in the oil until golden and crisp, about 10 minutes. Remove and drain on paper towels. Season with salt.


- Serve the fish and chips hot with lemon wedges and tartar sauce.
