Ingredients:

- 2 cups heavy whipping cream


- 4 mangoes, peeled and cubed


- ¾ cup packed dark brown sugar


- ¼ cup light corn syrup


- ½ teaspoon kosher salt

Method:

- Combine mangoes, cream, brown sugar, and corn syrup in a blender or food processor. Blend on high for 30 seconds.


- Transfer to an airtight container. Refrigerate, 8 hours to overnight.


- Pour mixture into an ice cream maker and freeze according to manufacturer's instructions, about 20 minutes. Transfer to an airtight container and freeze until firm, about 4 hours.

Notes:


You can also add a handful of chopped nuts, such as toasted almonds or pistachios, to the ice cream mixture before freezing. This will add a crunchy texture and a nutty flavor that complements the creamy mango base.
