Matar Pulao (Rice with Peas)
Matar Pulao is a famous and traditional dish of Pakistan, usually served with mint yogurt sauce and a fresh vegetable salad. Overall it's a wholesome meal because it includes peas, rice, and healthy spices, and is served with fresh vegetables and yogurt, making it a well rounded and nutritious option.

Ingredients:



- ⅓ cup of sunflower oil

- 2 cups of rice

- 1 cup of peas

- 2 green chilies

- 1 yellow onion, sliced

- 1 teaspoon of garlic, minced

- 1 teaspoon of ginger, minced

- 1 inch cinnamon

- 1 black cardamom

- 1 bay leaf

- ½ teaspoon of cumin seeds

- ½ teaspoon of black peppercorns

- Salt to taste



Method:



- In a pot, heat the oil and add onions. Fry onions over low heat until golden brown or about 12 minutes.

- Add garlic and ginger, and fry for 30 seconds.

- Add all of the whole spices and green chilies; fry for 1 minute.

- Add peas and fry for 2 minutes. Now, add 4 cups of water, rice, and salt. Bring to a boil.

- Now, lower down the heat and let it simmer for 10 minutes.

- When water is finished, remove from the heat and put a firm lid on the pot.

- Put the pot on the stove again over very low heat and steam for 10 minutes or until rice is soft.

- Remove from the heat and serve with vegetable salad and mint yogurt sauce



Notes:



To add more heat, you can increase the quantity of green chilies or can add some crushed black pepper.
