Morrocan Lamb with Dates and Sweet Potato

Serves:

Ingredients:

- 1 tablespoons of olive oil


- 425 ml boiling water


- 500 grams boneless lean lamb


- 50 grams pitted dates


- 1 onion, chopped


- 300 grams sweet potatoes, cut into pieces


- 1 tablespoon of tomato puree


- 2 teaspoons of coriander, grounded


- 2 teaspoon of cinnamon, grounded


- 2 tablespoons fresh coriander, chopped

Method:

- In a large pan, heat the oil and add the lamb and onion. Fry over high heat until the lamb is nicely browned.


- Add all the spices and sweet potatoes. Mix everything very well.


- Now, mix in boiling water and tomato puree. Cook until it boils.


- Once it starts boiling, lower the heat and cover the pan to cook for 15 minutes or until the lamb is nicely tender. Serve in a bowl after garnishing with fresh coriander.

Notes:


Lamb leg doesn’t require a lot of time to cook compared to other cuts. So be careful about the cooking timing.
