Method:

- Make the Dough: In a large bowl, combine flour and salt. Make a well in the center, add the egg and gradually mix in the water until a dough forms. Knead on a floured surface until smooth. Cover with a cloth and let rest while you make the filling.


- Prepare the Filling: Boil the potatoes until tender. Mash them and then mix in the cheddar cheese, onion, salt, and pepper.


- Assemble the Pierogi: Roll out the dough thinly and cut out rounds with a cookie cutter. Place a spoonful of filling on each round, fold the dough over, and seal the edges.


- Cook the Pierogi: Bring a large pot of salted water to a boil. Add the pierogi in batches and cook until they float to the surface, about 3-4 minutes. Drain and then pan-fry in butter until golden.


- Serve: Serve the pierogi hot with sour cream and sprinkle with chives.
