Gulab Jamun is a beloved Pakistani recipe often served at celebrations and special occasions. These deep-fried dough balls, made from milk solids, are soaked in a sweet, fragrant sugar syrup infused with cardamom and rose water, offering a rich, decadent treat that melts in your mouth.

Ingredients:

- For Gulab Jamun:

- 1 cup milk powder


- 1/4 cup all-purpose flour


- 2 tablespoons semolina (sooji)


- 1/4 teaspoon baking powder


- 2 tablespoons ghee (clarified butter), melted


- 1/4 cup milk, lukewarm


- A pinch of cardamom powder

- For Sugar Syrup:

- 2 cups sugar


- 2 cups water


- 4 cardamom pods, slightly crushed


- 1 teaspoon rose water

Method:

- Prepare Sugar Syrup:

- In a large pan, combine sugar, water, and cardamom pods. Bring to a boil, then simmer for 10 minutes until syrupy. Stir in rose water and set aside.

- Make Dough:

- In a bowl, mix milk powder, flour, semolina, and baking powder. Add ghee and mix well. Gradually add milk to form a soft dough. Cover and let rest for 30 minutes.

- Form and Fry Gulab Jamun:

- Knead the dough gently and form into small balls, ensuring there are no cracks.


- Heat oil in a deep pan over medium heat. Fry the dough balls until golden brown on all sides.

- Soak in Syrup:

- Immediately transfer the fried balls into the warm syrup. Let them soak for at least 1 hour, ensuring they are fully submerged.

Notes:

- Ensure the oil is not too hot; otherwise, the gulab jamuns will not cook through and may harden.


- Gulab Jamuns expand in the syrup, so give them enough space to soak.


- Serve warm or at room temperature for best flavor.
