Syrniki

Syrniki
Syrniki are a beloved Eastern European delicacy, particularly popular in Russia and Ukraine. These delectable cheese pancakes, made from farmer's cheese (tvorog), offer a crispy exterior with a soft, creamy interior. Traditionally served for breakfast or as a dessert, Syrniki are best enjoyed with a dollop of sour cream, jam, or honey, making them a versatile treat that combines the savory with the sweet.

Total Time: 25 minutes

Serving: 4 (2 syrniki each)

Ingredients:

- 2 cups farmer's cheese (tvorog)

- 2 large eggs

- 1/4 cup all-purpose flour (plus extra for dusting)

- 3 tablespoons sugar

- 1 teaspoon vanilla extract

- 1/2 teaspoon baking powder

- Pinch of salt

- Butter or oil for frying

- Sour cream, jam, or honey for serving

Method:

- Mix the Ingredients:

- In a large bowl, combine the farmer's cheese, eggs, sugar, vanilla extract, baking powder, and a pinch of salt. Mix until smooth.

- Gradually add the flour to the mixture, stirring until the dough is thick but still slightly sticky.

- Form the Syrniki:

- Dust your hands with flour to prevent sticking. Take a portion of the mixture and form it into a small, thick patty. Repeat with the remaining mixture.

- Cook:

- Heat butter or oil in a large frying pan over medium heat. Fry the syrniki for 3-4 minutes on each side, or until golden brown and crispy.

Notes:

- Ensure the farmer's cheese is well-drained before use to achieve the right consistency.

- If the mixture is too wet, add a little more flour until manageable.

- Serve hot with sour cream, jam, or honey, and enjoy the melding of flavors.
