Zucchini Chicken Fritters

Ingredients:
- 1 large egg
- 2 cloves garlic, pressed
- 1/4 cup green onions or chives, finely sliced
- 8 oz ricotta cheese, or 1/2 of a 15oz tub
- 1/4 tsp freshly cracked black pepper
- 2 tsp salt, divided
- 1 lb ground chicken
- 2 medium zucchini, about 1 1/4 lbs, grated (1 green zucchini and 1 yellow squash)
- Olive oil for sautéing
Method:
- Place the grated zucchini in a colander or bowl. Sprinkle with 1 tsp of salt and let it sit for 10 minutes. Squeeze out as much juice as possible from the zucchini, squeezing it by the fistful to extract the most juice. You'll be surprised by how much juice comes out. Transfer the drained zucchini to a large bowl and discard the drained juice.
- To the drained zucchini, add 1 lb of fresh ground chicken, 1 tsp salt, 1/4 tsp pepper, 1/4 cup finely sliced green onions, 1 egg, 2 pressed garlic cloves, and 8 oz of ricotta cheese.
- Heat a large non-stick skillet over medium heat and add 3-4 Tbsp of extra light olive oil. Form the mixture into round patties about 1/3-inch thick, using a heaping tablespoon for each. Cook the patties uncovered for 3 minutes, then flip, cover, and cook for another 3-4 minutes, or until cooked through. Add more oil to the pan as needed for subsequent batches.
Notes:
To make the patties even more flavorful, consider adding some grated Parmesan cheese or your favorite herbs and spices to the mixture before cooking.
