Ingredients:

- 3 lbs beef roast (topside or sirloin)


- 2 lbs potatoes, peeled and quartered


- 1 lb carrots, peeled and sliced


- 1 lb parsnips, peeled and sliced


- 2 onions, quartered


- 4 cloves of garlic, minced


- 2 tablespoons olive oil


- Salt and pepper to taste


- Fresh rosemary and thyme


- 1/2 cup beef broth


- 1/4 cup red wine (optional)

Method:

- Prepare the Beef:

- Preheat your oven to 375°F (190°C). Rub the beef with olive oil, salt, pepper, and minced garlic. Place in a roasting tin, surrounded by the quartered onions and fresh herbs.

- Roast the Beef:

- Roast in the preheated oven for about 1 hour 30 minutes for medium-rare, or longer depending on your preferred doneness. Baste occasionally with the juices from the tin.

- Prepare Vegetables:

- Toss the potatoes, carrots, and parsnips in olive oil, salt, and pepper. Add these to the roasting tin around the beef during the last 45 minutes of cooking.

- Rest and Serve:

- Once cooked, remove the beef from the oven, cover with foil, and let it rest for 20 minutes. This allows the juices to redistribute, making the meat more tender and flavorful.


- Increase the oven temperature to crisp the vegetables if needed.

Notes:

- For a complete Sunday roast, serve with Yorkshire pudding and a side of gravy made from the roasting juices mixed with beef broth and red wine.


- Adjust the roasting time based on the size of your beef cut and desired level of doneness.
