Ingredients:

- 1 ½ pounds lamb, cut into chunks


- 1 cup plain yogurt


- 2 tablespoons vegetable oil


- 2 large onions, finely chopped


- 4 cloves garlic, minced


- 1 tablespoon grated ginger


- 2 teaspoons paprika


- 1 teaspoon ground cumin


- 1 teaspoon ground coriander


- 1/2 teaspoon turmeric


- 1/2 teaspoon garam masala


- 1/4 teaspoon ground cardamom


- 1 cup water


- Salt to taste


- Fresh cilantro, chopped for garnish

Method:

- Marinate the Lamb:

- In a bowl, mix the yogurt with paprika, cumin, coriander, turmeric, and cardamom. Add the lamb pieces and coat well. Let it marinate for at least 30 minutes.

- Cook Onions and Spices:

- Heat oil in a large pot over medium heat. Add onions, garlic, and ginger, cooking until onions are golden brown. Stir frequently to prevent burning.

- Add Lamb and Simmer:

- Add the marinated lamb with all the marinade into the pot. Cook until the lamb is browned on all sides.


- Pour in water, bring to a boil, then reduce heat to low and cover. Simmer for about 1 hour, or until the lamb is tender.

- Finish with Garam Masala:

- Stir in garam masala and cook for an additional 10 minutes. Season with salt to taste.

Notes:

- For best results, use fresh, high-quality spices.


- Lamb Roganjosh can be made a day ahead as the flavors deepen overnight.
