Ingredients:

- 1 cup sweet rice flour (mochiko)


- 1/4 cup sugar


- 1 1/4 cups water


- Cornstarch for dusting


- 1 pint of your favorite ice cream flavor

Method:

- Prepare Ice Cream Balls:

- Scoop your chosen flavor of ice cream into 12 small balls using an ice cream scoop. Place on a baking sheet lined with parchment paper and freeze until very firm, about 2 hours.

- Make Mochi Dough:

- In a microwave-safe bowl, whisk together sweet rice flour, sugar, and water until smooth. Cover the bowl with plastic wrap, leaving a small vent, and microwave on high for 1 minute. Stir, then continue to microwave in 30-second bursts, stirring between each, until the dough becomes sticky and translucent.

- Shape Mochi:

- Dust a surface with cornstarch and turn the hot mochi dough onto it. Dust the top of the dough with more cornstarch and let it cool just enough to handle. Roll out the dough into a thin layer and cut out 12 circles using a cookie cutter or a cup.

- Assemble Mochi Ice Cream:

- Place a mochi circle on your palm, dusted side down, and put an ice cream ball in the center. Carefully wrap the mochi around the ice cream, pinching the edges to seal. Repeat with all ice cream balls. If the mochi tears, patch it with a small piece of dough.

- Chill and Serve:

- Quickly transfer each mochi ice cream back to the freezer and chill until firm. Serve immediately or keep frozen in an airtight container.
